Winter Recipe

Get through the last few months of winter with a delicious and affordable bowl of soup. The veggies in this pumpkin and potato soup will only set you back about $3.34 when you buy them at one of our markets!

  • 3 tablespoons unsalted butter

  • 2 cups roughly chopped brown onions ($0.45)

  • 1 kg butternut pumpkin ($1.98)

  • 2 medium sweet potatoes, peeled and cut into 1-inch chunks ($0.62)

  • 8 cups broth

  • 1-1/2 teaspoons salt

  • 1/2 teaspoon ground black pepper

  • 1 tart yet sweet apple, such as Fuji or Pink Lady, cored, peeled and cut into 1/2-inch pieces ($0.29)

  • 3 tablespoons honey

  • 1/2 teaspoon ground cinnamon

  • 1/4 teaspoon ground mace

  • 1/8 teaspoon ground nutmeg

  • 1 cup heavy cream or coconut cream
